This is OLD NEWS. Bacon weaving has been around for ages and the idea is NOT worthy of a repeat.
As an unemployed PROFESSIONAL CHEF educated in Brooklyn at Peter Kump’s Culinary Institute (now living in Clearwater), I find the whole idea rather juvenile.
I have been posting on the internet for 15 years giving people advice and criticizing fakes like Sandra Lee and Giada on FN. I hate to see bandwidth wasted.

My grandfather was a professional chef. He immigrated to the US from France and had plenty of credit to his name prior to his passing. As much as you find the idea juvenile, getting people to go outside the Macaroni and Cheese box shouldn’t be something you insult.
I am not particularly fond of Sandra Lee, kind of like Giada on FN. Wonder how you feel about Rachel Ray or Alton Brown?
Food is both art and chemistry. If people don’t learn and experiment, then where do we go? They can’t always eat high class meals prepared for them by the best chefs. Being a purist and doing everything in only the way you see fit, will result in having fewer people in the kitchen. There is a place for both kinds of cooking. I’m disappointed you don’t have more respect for food and people than that.

Hey, chiffOnade! Lighten up. The bacon weave is mucho cool. In the days when I was ingesting bacon (only the best from small artisan bacon shop — for real) I never thought of doing this. The husband and boy child still ingest it and I’m thinking this might be a really crazy thing to do for them one Sunday a.m. Question: Do you do it on a rack and bake it the oven?

Bacon is cool. Btw, It’s 2am , I’m reading comments about bacon slices and I feel a tad ridiculous. I would have never thought that people could bash about something as dumb as bacon! And by the way chiffon, the fact that you are operating websites that talk about food have absolutly nothing to do with the fact that your first comment was completly irrelevent. Love the baconweave. Is this fried in Crisco. At my age I can eat anything I want. When I was 10 I would eat a pound of crisp bacon and my mother thought it was wonderful. “Look, she likes it!” Am going to try this on my 75 year old friends. Keep up the delights of living.

Well, as a Dark Lord of the Baconic Arts I must congratulate you on this find. Yes, I’ve seen it before in various guises. One I particularly adore is when the weave is baked over an upturned bowl, making a lovely basket for the rest of your meal. When I say meal, I mean the lesser articles that usually accompany the bacon: eggs, toast, potatoes … that kind of thing.

Umm… to the above: no one is fooled.
To all else: I am sooo tempted to make this, but since my stepdad is on a no-fat diet (for medical reasons, not vanity), I think it would be incredibly cruel. I shall have to find one of my non-vegetarian friends and make it at their house. Yum.
…the funny thing is, I don’t really love bacon. Maybe I shall try the same thing with pasta.

Actually, you can buy bacon without nitrates. It’s a little more expensive, but it’s worth it.
Sodium nitrate is added to make it look red, so the non-nitrate bacon looks grayish in the package compared to the regular kind. However, it cooks up to the same color as regular bacon and most importantly, the flavor is at least as good.

if i were still eating meat i would do this in a heartbeat. and to think i wasted all those years having bits of my blt without bacon because, lets face it, no matter how hard you try the bacon never really matches up to cover the whole sandwich. it almost makes me want to go back to meat, if only long enough to try this.

New or not, I’ve never seen anything like this - wow! I think it is pretty cool! I love bacon, so I would love to have a sandwich made from a bacon quilt!!!! I know, I know - it’s bad for us, but in such a good way LOL.
As for the bashing of Sandra Lee and Giada - shame on you. Whether or not you like someone is of little consequence to anyone else. I personally do not care fro Rachel Ray or Alton Brown, but millions do. That doesn’t insult me or my intelligence one bit. I’m sure Ms Ray and Mr. Brown are not bothered by the fact that they are not among my favorites.
While gourmet food is often times delicious (although, some times it is simply pretentious!) most of us cannot afford/do not care to eat it as regular fare. I think that Ms Lee and Ms de Laurentis do not profess to be gourmet chefs but rather cooks for the regular person eating regular food.
Thankfully, there is much room in this world of our for dissenting opinions, and I, for one, am glad that we are free to express our opinions. I am also thankful that we can share different experiences.

And? Your post is made of complete irrelevance. In this day and age, certain studies funded by special interest groups will say what the interest group wants the study to say if the price is right. Cellphones caused tumors, then they caused benign tumors, then they cause malignant tumors, then they cause no tumors at all, then they made your sperm count small, then they killed children in school shootings, then they caused 9/11. So because of something you “read” in a report/on the internet, don’t just rebroadcast what could be potentially false information. Remember when Margarine was better for you than Butter, and the time before that when Butter was better for you than Margarine?
At any rate, Baconweave is made of bacon, and win. So what if you’re an unemployed food troll or someone who believes everything you read?
It’s interesting, so contribute something you find is better instead of bashing what’s been contributed.

I had a huge rant that I then erased, in favor of not perpetuating that stuff any longer and helping get this discussion back on track. Some people simply didn’t learn proper etiquette.
I have a question about the bacon weave, particularly around the edges — did its inherent moistness hold it together, or did you use toothpicks during cooking? Does it help hold the sandwich together better so the bacon doesn’t fall out (I don’t use sandwich spread on BLT)?
Its very neat-looking. (8 And it looks done exactly the way I like it!

I think I read all of the messages and still haven’t seen anyone who actually did it. Please, if you have tried it, tell us how to do it “right”. I may try it anyway, but knowing how to do it “best” would be really helpful. I will wait to see…( I’m not the world’s best cook, so will leave technique to the more talented of us). If I don’t see any posting telling how to do it, I will forge ahead. :)

Awesome idea, it’s almost weird how someone hasn’t thought of this before.
BUT, pork isn’t kosher, bacteria inside pig doesn’t die even after it’s cooked AND pigs are the worst treated factory farm animals. It’s sick, there’s bacon in almost all fast food to give you the idea of how bad it is. I don’t eat pork, or meat for that matter. I have been almost 95% vegan for the last 9 months. It’s easier then you think.

after reading all these comments from truly serious bacon fans like my self, i figured i’d put up how we made it and see if anyone can improve on it. Basically we started by doing math, 3 guys X 2 pounds of bacon = amazing. Next We split up the bacon and tried to see who could come up with the best weaving method. Mine took the longest but had the tightest weave. What I did was lay out about 8 strips of bacon on a plate in the same direction. Then I placed one piece of bacon along the edge in the other direction with a weave pattern through the eight pieces. Now I folded every second piece of the 8 bacon strips backwards over the single woven piece along the edge. This made it easy to place a second strip beside the singe one over top of the 4 pieces not folded away. When you fold back the 4 pieces it creates a weave. Then fold the other 4 pieces back and place another strip beside the 2 that are woven already and fold the 4 pieces back. Kinda confusing to type but it was the easiest way to create a tight weave. We cooked the bacon on a broiler pan in the stove for 15 minutes each side at high broil. The bacon automatically fuses together with the grease and stuff to create a solid sheet of baconness. The hardest part for us was transporting the bacon weave in it’s raw state from the plate to the broiler pan. I found pressing my open hand across the weave and slowing sliding worked best. We thought weaving it on the pan would work but only if you make one weave. Since we were making 3 the pan was to hot to make the second and third on after the first was cooked. We put the weave on sliced tomato’s, sprinkled it with mozzarella and put it on mayo’d cheese bread. My wife picked on us the full four hours we spent working on the project but when I offered her just one bite she changed her mind immediately.
